Fresh bread crumbs are so easy to make and the perfect way to make use of left over bread.
Simply cut or break the bread into small chunks, toss them into your food processor and pulse until you have little crumbs. These tender flakey crumbs will freeze nicely and are ready whenever you need them. There is no need to ever throw away bread ends and pieces again.

The uses for them are endless: crunchy toppings to garnish soups, salads and pasta dishes; breading for chicken, cutlets and chops; binders for meatloafs and crab cakes; and stuffings for lamb, roasts, porchetta and vegetables like my recipe for Stuffed Tomatoes. Fresh bread crumbs are a blank canvas waiting for you to paint them a palate of flavor.
