Egg Wash

Egg Wash made Simple.

Egg wash is a simple step to making baked items looking pretty.

Egg Wash in glass jar with pastry brush in background

Here is a quick little kitchen tip for eliminating waste.  I like to crack the egg into a small container, glass or plastic.  Combine the egg with 2 teaspoons of water.  Place the lid on the container and shake it up.  This allows me to egg wash baked goods easily, and it is particularly helpful when I’m baking several different cookies or other baked goods over several days.  The beaten egg keeps well for a day or two, eliminating the need for using several eggs.  If I am only doing the one batch of cookies, I save the rest of the beaten egg and add it to my scrambled eggs in the morning or cook them up for my dog.

Egg Yolk Wash

Egg wash can also be made from a left over yolk.  As in the recipe for Maple Pecan Biscotti which calls for one egg and one egg white.  Reserve the additional egg yolk and  place it a sealable container.   Add a teaspoon of water, and shake to combine.
