The Components
This dessert is easy to put together, and the individual components are very easy to make as well.
The Chocolate Pudding
The chocolate pudding is made from almond milk and cooked on the stovetop. This pudding is delicious on its own, but add the other two components and it makes a colorful presentation, with crunchy texture and bursts of sweet fruit. My recipe for chocolate pudding made with almond milk is only 4 WW Smart Points for a 1/2 cup serving, on both the Freestyle and Simply Filling Plans. However if you are looking to lower the point and calorie count, a 1/3 cup is 3 WW Smart Points.
The Chocolate Sand
My recipe for Chocolate Sand is made with oat flour, which makes it gluten-free. It is a crunchy-sweet-salty cookie crumble delicious served on pudding, ice cream and yogurt.
The Berries
Raspberries are the star here as they glisten like pretty little juicy-red gems. But any pretty berry can stand in, especially strawberries.

Create your parfait to fit your points. The points are the same for both the Freestyle and Simply Filling Plans. Mix and match from the following options:
- 1/2 cup chocolate pudding -4 WW Smart Points
- 1/3 cup Chocolate Pudding-3 WW Smart Points
- 1/4 cup Chocolate Pudding-2 WW Smart Points
- 2 teaspoons Chocolate Sand-1 WW Smart Point
- 1 Tablespoon Chocolate Sand-2 WW Smart Points
Create your parfait tailored to the points you wish to use by varying the chocolate pudding and sand amounts and adding more berries. For instance, a parfait prepared with 1/2 cup of Chocolate Pudding and 1 Tablespoon of Chocolate Sand is 6 WW Smart Points. The parfait in the picture above was prepared with 2 teaspoons of Chocolate Sand and 1/2 cup of Chocolate Pudding for a total of 5 WW Smart Points. However, if you reduce the pudding serving to 1/3 cup with 2 teaspoons of chocolate sand the dessert now becomes 4 WW Smart Points.
Creating the Parfait
Create the parfait by layering the following ingredients.
- Place 1/2 teaspoon of Chocolate Sand into the bottom of glass.
- Position 5-6 raspberries on top of the Chocolate Sand.
- Spoon a 1/4 cup Chocolate Pudding into the glass.
- Gently add 1/4 cup more of raspberries on top of the pudding.
- Sprinkle with a 1/2 teaspoon more of Chocolate Sand.
- Top the parfait with the final 1/4 cup of Chocolate Pudding.
- Finish with the last teaspoon of Chocolate Sand.
- Garnish with a sprig of fresh mint and serve.
