4 Ounces Bittersweet Chocolate, chopped
4ounces Semisweet Chocolate, pieces divided in half.
1/2cup Butter, cut into pieces
1/4cup Unsweetened Applesauce
1cup Granulated Sugar
2 Tablespoons Cocoa Powder (Dutch Processed)
4 Large Eggs
1 teaspoon Vanilla
1 1/2 teaspoons Kosher Salt
3/4cup All-Purpose Flour or Oat Flour
Instructions
Preheat oven at 350 degrees.Spray a 13 x 9-inch baking pan with Bak Kleen ZT.
In a metal bowl set over a pan of barely simmering water, melt the bittersweet chocolate, 2 ounces of semisweet chocolate and butter.Stir occasionally until mixture is smooth.Remove from heat and let cool for about 5 minutes.
Mix in the cocoa powder.
Stir in the sugar and the vanilla and whisk until the sugar is incorporated.
Add the applesauce and mix to combine.
Whisk in the eggs one at a time, stirring well after each addition.
Stir in the salt and the flour, stirring just until the mixture is combined.
Pour the batter into the prepared baking pan and smooth the top.
Sprinkle the remaining semi-sweet chocolate chips evenly over the batter.
Bake the mixture in the middle of the oven for 13-16 minutes.A cake tester inserted into the center will come out with some crumbs adhering to it.If you jiggle the pan, the center should not wiggle, and the sides will start to pull away from the pan.
Remove from oven and let cool in the pan, set on a cooling rack for ten minutes.
Invert onto a sheet of parchment paper. (The parchment will keep the soft chocolate chips from sticking to your board or rack. Once completely cooled, invert onto a cutting board and cut into 2 x 2 inch squares, 24 equal pieces.
