Step 1. After gently washing the figs, trim off the stems, cut in half and arrange on a serving dish. Also there is no need to remove the skin as it is completely edible. The beautiful color of the skin whether it is green or purple, adds rich contrast. However if you find it unappetizing, you are welcome to remove it. Ripe figs will peel easily.

The Figs
There are a large variety of figs available throughout the season. Some of the more popular sweet and jammy figs are O’Rourkes, LSU Purple, Italian Black, Mission, Brown Turkey, Celeste, Tiger Figs, Sierras, Green Ischia and Alma. These are just a few of the varieties available and they range in color from green, greenish purple, brown, purple to Cabernet and black.
Fresh Figs are very perishable and should be kept refrigerated. Use figs as soon as possible. Fresh figs will store for as long as 5 to 7 days, if stored at 32-36 degrees F. When choosing figs, look for figs that are clean and dry with skin that is smooth and unbroken. Additionally, figs should be slightly soft and yield to the touch, but not mushy. If a fig is too firm, it is not ripe and will not ripen further, once picked.
To prepare the figs, simply wash the fig gently and split in half cutting through the stem. If you like, the stem tip may be trimmed off. Also, don’t worry about trying to peel the figs, the skin is completely edible.
The Goat Cheese and Honey
Any goat cheese works well here, use your favorite. This is my favorite brand. I find it to be extremely smooth and creamy, with a mild tangy flavor.
Typically, I use plain unflavored goat cheese. However, you can use any flavor that strikes your fancy.
I would steer clear of a truffle flavored cheese for this dish.
The honey is used more to enhance a little sweetness to both the cheese and the figs. Use the honey you have on hand. But if you are looking for a great honey, I highly recommend this brand. Look for it in your area, as L.R. Rice sells local honey from local hives. Often times, I can find this brand at Costco.
For a dramatic presentation drizzle a thin ribbon of honey over the top of the fig halves and cheese. Additionally, only a teaspoon of honey is needed to enhance this dish.
The Bacon
The bacon crumbles add a bit of crunchy texture and it brings a hint of saltiness to the sweet of the honey and fig; and the tartness of the cheese. But if you would like to make this dish vegetarian, it can be omitted.
