Fresh and Fruity Peach Vinaigrette

This easy peach recipe produces a luscious vinaigrette dressing that will add a sweet kiss of summer to your fresh salads. Not only do the peaches bring forth their fruity aroma and flavor, they also thicken the vinaigrette into a full bodied dressing.

Fresh Peach Vinaigrette will give any salad a summer kiss.

During the summer, my family enjoys eating big dinner salads. As summer allows us to take advantage of so many fresh vegetables and fruits, the variety of combination are endless. One of our favorite summer salads starts with a large bed of mixed greens topped with slices of spicy barbecued chicken breast, chopped fresh fruit and tomatoes, almonds slices, and finished with crumbled blue cheese.

Another favorite salad begins with a large bed of mixed greens, celery slices and torn pieces of fresh cilantro. For the grand finish the salad is topped with thin slices grilled flap steak and fresh peaches. Both of these salad options are delicious dressed with this creamy peach dressing.   Additionally, this fruity vinaigrette makes an outstanding dressing for grain salads, like bulgar, farro and quinoa.

For a simple and easy salad option,  I love to drizzle this dressing over a Sweet Peach and Tomato Salad.   For a  stunning salad simply alternate layers of sliced tomatoes and peaches on a platter  The sweet peaches balance the acidity of the tomatoes making a refreshing summer salad. If you choose, sprinkle a few baby greens or basil leaves for a pretty garnish.  Not only is this delicious salad a colorful presentation but it is so easy to make.

Peaches or Nectarines

If you don’t have peaches on hand…not to worry.  Nectarines work nicely in this recipe, as well.  Furthermore, this vinaigrette is a great way to use a peach or nectarine that is less than perfect or that got bruised on the way home from the market.  A less than perfect piece of fruit won’t be noticed in this recipe. But the fruit will certainly add a touch of sweetness and great body to the vinaigrette.

Ingredients

Units Scale
  • 1 cup (175 grams) Fresh Peach, peeled and cut into chunks, about 1 large peach
  • 10 teaspoons (60 grams) Rice Vinegar
  • 2 teaspoons (10 grams) Dijon Mustard
  • 6 teaspoons (25 grams) Olive Oil
  • 2 teaspoons (11 grams) Honey
  • 1 teaspoon (5 grams) Kosher Salt

Instructions

  1. Place all ingredient into a blender.
  2. Blend until smooth and creamy.
  3. Store in a glass jar and store in refrigerator.
  4. Serve when ready.
