5 Large Eggs
2 Tablespoons 2% Milk
2 teaspoons Sugar
5 Pinches of Salt
1/2 teaspoon Cinnamon
2 1/2 Tablespoons Mascarpone Cheese
2 1/2 Tablespoons Nutella Spread
10ounces Challah Bread, sliced**
1 teaspoon Butter, divided in half
** Bread sliced in either 4 equal portions of 2.5 ounces per slice with a pocket cut into them OR
** Bread sliced into 8 equal portions of 1.25 ounces per slice to be made into Nutella sandwiches.
Instructions
Preheat a large (12-inch) skillet over medium-low heat.
Meanwhile in a large bowl whisk together the eggs, milk, sugar, cinnamon and 4 pinches of salt.
In a small bowl blend together the mascarpone cheese, Nutella and one (1) pinch of salt.
Prepare bread slices with Nutella cheese mixture using either of the methods outlined above by spreading 1 (one) tablespoon of Nutella mixture between each of the four sandwiches.
Dip Nutella sandwiches into egg mixture turning over to let both sides soak up egg. Take care to remove before becoming over saturated. Usually a minute on each side should be adequate.
Place 1/2 teaspoon of butter into heated pan and swirl around to coat pan.
Place egg dipped bread slices into pan and saute until golden brown on underside (about 4-5 minutes).
Turn each sandwich over and continue cooking until golden brown and cooked through, about 4 minutes more. Add the additional 1/2 teaspoon of butter if necessary.
Garnish with fresh berries and a dusting of confectioner’s sugar if desired.
