Pan seared salmon seasoned with barbecue seasoning, for the sweet-savory flavors of summer year round.

Ingredients

FOR SEASONING:

  • 2 Tablespoons Brown Sugar
  • 1/4 teaspoon Ground Cinnamon
  • 2 teaspoons Kosher Salt
  • 1/4 teaspoon Paprika
  • 1 teaspoon Ground Black Pepper
  • 1/4 teaspoon Ground Cumin
  • 1/4 teaspoon Dry Mustard

FOR THE SALMON:

  • A 56 ounce FIllet per person
  • 1/4 teaspoon of Butter for the pan

Instructions

FOR THE SEASONING:

  1. Combine all ingredients for the seasoning mix in a small jar.    This recipe  will make  9 1/2 teaspoons of seasoning, enough for 5 servings of fish.   Any additional mix can be stored in an air-tight jar.  

FOR THE SALMON:

  1. Preheat oven to 350 degrees.
  2. Rinse salmon under cool water removing any loose scales.
  3. Pat salmon dry with paper towels and arrange on a dish.
  4. Rub 2 teaspoons of seasoning on each fillet.
  5. Heat an oven-proof, nonstick skillet over medium-high heat.  Add the butter and with a spatula spread throughout pan.  Immediately place the salmon fillets rub side down.  When the salmon releases easily and rub-side is browned, flip the fillets over, about 2-3 minutes. 
  6. Transfer pan immediately to pre-heated oven.
  7. Roast until the thickest part of the fillet flakes easily with a fork, about another 5-6 minutes.  This may vary by several minutes, depending on the thickness of the fillet.  Please take caution when removing pan from oven.  It is very easy to forget that the handle is hot and grab it. 
  8. Serve immediately
