While this colorful patriotic dessert is perfect for a holiday celebration, it is also the perfect parfait to celebrate summer. Especially because fresh berries are at their peak. So allow yourself to enjoy a guiltless pleasure, as this sweet treat will make any day a special day.
The Berries
What more could possibly be said about the berries. They are fresh and wonderful this time of year. And all that is required is to wash and pat them dry. If strawberries are not available, raspberries will make a good substitute.
The Pudding
For this dessert, choose your favorite vanilla pudding. But my personal opinion is that homemade puddings are best. Homemade puddings are creamier and more flavorful than those from boxes. Furthermore, because it is made from almond milk it is lower in calories.
While homemade pudding will require a little more time to cook, it is well worth the effort. Also, it can be made a day or two in advance. Simply cover the surface of the pudding with plastic wrap. This will prevent a skin from forming on the pudding as well as keep it from weeping.

Creating a Patriotic Parfait
Now that all of the ingredients are prepared, making your dessert will be a snap. To create these colorful Red, White and Blue Berry Parfaits simply begin by layering a few strawberries on the bottom of the glass. Top with a layer of pudding, followed by edible sand. Repeat with blueberries. You can continue to layer in this manner until your parfaits are complete. Save a little dusting of edible sand for the top.

Ingredients
- 1 cup Vanilla Pudding made from Almond Milk OR your favorite recipe.
- 2 Tablespoons of Edible Sand
- 1 cup Fresh Strawberries, washed and dried, then sliced
- 1 cup Fresh Blueberries, washed and dried
Instructions
The amount of pudding used to create the layers will differ according to the height and width of the glass vessel. The parfait glass used in the pictures are 5 1/2 inches tall and 1 1/2 inches in diameter. If a shorter and wider glass is being used, the amount of pudding used to create the layer will need to be adjusted slightly. Instead of using 2 tablespoons, adjust this amount to 3 or 4 tablespoons, creating 2 pudding layers.
- Create the first layer with sliced or chopped strawberries.
- Top with 2 1/2 Tablespoons of vanilla pudding.
- Sprinkle 1 teaspoon of edible sand over pudding.
- Place 1/4 cup of blueberries on top of the sand.
- Top with 2 1/2 Tablespoons of vanilla pudding.
- Lay another 1/4 cup of strawberries on top of vanilla pudding.
- Followed by another 2 1/2 tablespoons of vanilla pudding.
- The final layer of 1/4 cup blueberries are placed on top of the pudding.
- Use 1 teaspoon of edible sand to top off the parfait.
Notes
If a shallower and wider parfait dish is being used, adjust the quantity of pudding accordingly. Perhaps instead of 2 1/2 tablespoons, use 1/4 cup of pudding creating 2 layers rather than 4.
