Here is a quick tip on Storing leftover Chipotle Adobo
Chipotle in Adobo Sauce is usually purchased in 8 oz cans, but very few recipes call for more than a tablespoon or two. Here is my tip to for storing leftover chipotle and adobo, its’ flavorful sauce. I also use this same tip with left over tomato paste.
To Freeze
Line a salad plate or cake pan with a large sheet of plastic wrap. Using a tablespoon measuring utensil, scoop a tablespoon of chipotle pepper and some of the sauce. Following the edge of the plate, dot a tablespoon of chipotle around the inside of the edge. Continue around the plate with spoonfuls of chipotle until you have finished the can, placing one or two tablespoons near the center. Place the plate in the freezer.
To Store
Once, the peppers and sauce are completely frozen, cut a wide piece of plastic wrap around each frozen scoop and wrap it up. Place all of the frozen and wrapped chipotle “pops” into a sandwich bag marked “Chipotle”. You can now store these little cubes for future recipes in the freezer.
Cooking with frozen chipotle
When I’m preparing a dish like Sopa Seca de Fideo, I simply drop in a frozen cube of chipotle and let it melt in the simmering pot. The next time you have a recipe that calls for a tablespoon of chipotle in Adobo, simply unwrap the little chipotle “pop’ and drop it into your pan. The heat from the dish you are cooking will quickly melt the “pop” into your dish.
