A Savory and Crunchy Topping 

Toasted Breadcrumb Gremolata is the finishing touch on my Turkey Tetrazzini Soup.  However, it can be served with most any soup.  The hint of lemon and the savory, salty Parmesan adds a little pop of flavor and texture to the dish.  As well as making a pretty presentation.

The Breadcrumbs

Whenever I have bread that is less than fresh, I cube it up and toss it into my food processor.  These small morsels of Fresh Bread Crumbs freeze beautifully for use on demand.  Not only do I use them to make meatballs and meatloaf, but stuffed tomatoes and wonderful toppings like this gremolata.  Furthermore, the bread crumbs freeze nicely and are always available when I need them.  This crunchy breadcrumb topping can be ready to serve in less than 10 minutes.

Toasted Breadcrumb Gremolata

A crunchy, savory topping of toasted breadcrumbs seasoned with lemon zest, parsley and grated Parmesan cheese.

Ingredients

Scale
  • 1 1/2 teaspoons Olive Oil
  • 3/4 cup Fresh Bread Crumbs
  • 2 Tablespoons Parmesan Cheese, finely grated
  • 1 Tablespoon Fresh Parsley, minced
  • 1 teaspoon Lemon Zest
  • Salt and Pepper to taste

Instructions

  1. Heat a small skillet, either stainless steel or cast iron over medium-high heat. 
  2. Once the pan is very hot, add the olive oil and immediately add the breadcrumbs. 
  3. Toast the breadcrumbs while stirring continuously until the crumbs have turned golden brown and begin to get a little crunchy, about 5-6 minutes.  
  4. Remove from heat and let cool.  The breadcrumbs will continue to crisp while cooling. 
  5. Once the crumbs have cooled, add the Parmesan cheese, parsley and lemon zest. 
  6. Season with salt and pepper to taste. 
  7. Set aside until ready to serve.
  8. Leftover Breadcrumb Gremolata will store nicely refrigerated in an air-tight container.
