While this fresh tomato salad compliments Mediterranean dishes like chicken and grilled lamb, it is delicious with kebabs and gyros, as well. All that is required is a few minutes of chopping vegetables to bring this refreshing dish to the table.
Cucumber, Tomato and Celery for a light Refreshing Salad
The Cucumbers
Choose your favorite cucumbers for this dish. Generally, I prefer hot house cucumbers as they are milder. But the standard waxy skin cucumber works equally as nice. Simply peel the skin from the cucumber. Afterwards split the cucumber in half. Using the edge of a teaspoon remove the seeds by scraping the center of each half. To cut, slice each half lengthwise creating four long quarters. The cucumber quarters can be easily chopped into even pieces.
The Tomatoes
When choosing tomatoes for this salad recipe, look for firm ripe tomatoes. Some of my favorite varieties for this dish are Roma, cherry and firm slicing tomatoes like Beefsteaks.
The Celery
Fresh crisp celery is key for this dish. Slice the celery across the grain of the stem.
Refreshing Lemon Dressing for a Simple Crisp Salad
The dressing for this dish is as simple as fresh lemon juice, olive oil and Greek seasoning. These simple ingredients are whisked together and are used to season the vegetables and beans. By first marinating both the cucumber and beans in the dressing, bright lemon flavor is infused into these typically bland ingredients. Finally, just before serving, toss in the celery and tomatoes. Finish by sprinkling with feta cheese and garnish with fresh chopped parsley.

Ingredients
For the Salad:
- 1 1/2 cups English Cucumber, halved, seeded and sliced
- 1 cup Celery, cleaned and sliced
- 1/2 cup Garbanzo Beans, rinsed and drained
- 1 1/2 cups Tomatoes, quartered and seeded
- 1/2 ounce (13 grams) Feta Cheese, crumbled
For the Dressing:
- 4 teaspoons Lemon Juice
- 2 teaspoons Olive Oil
- 1 teaspoon Greek Seasoning
- Salt and Pepper to taste
Garnish
- 1 teaspoon Fresh Chopped Parsley (Optional)
Instructions
For the dressing:
- Whisk together lemon juice, olive oil, and greek seasoning. Set aside.
For the salad:
- Place the cucumber and garbanzo beans in a serving bowl. Dress with the lemon dressing, toss to combine and let rest for 10 minutes.
- Add the celery and tomatoes and mix to combine.
- Season to taste with salt and pepper.
- Just before serving sprinkle the feta cheese over the top of the salad.
- Garnish with chopped fresh parsley, if desired.
